On this post, we did a discovery food pairing with Davinzi’s italian food specialities with a local Swiss Malanser Pinot noir from Liesch Wine!

Aubergine pesto is a sauce whose main ingredients are aubergine, almonds, parmesan cheese, basil and extra virgin olive oil mixed together.
We boosted it a bit with roasted cashew nuts, toasted pine nuts , fresh basil leaves and some extra virgin olive oil from Davinzi.

But what are peperoni crushi?
They are sweet red peppers, dried and then fried, so that they become crunchy, or ‘cruschi’.
Cruschi peppers are a typical dish from Lucano
Pasta with cruschi peppers and breadcrumbs is one of the simplest ways to use this ingredient.
For xl pepperoni crushi we grounded some with a mortar to add more crunchiness to our pasta but you can also eat them on their own for your aperitifs.

According to the old lucanian tradition, the fresh meat is only cut and chopped with a knife during the production of the sausage and thus retains its pithy structure.
The classic sausage lucanica is made with locally bred pork meat, minced or ground, flavored with salt, wild fennel seeds, and pepper or peperoncino.

We toated our pine nuts in a NOSER-INOX non-stick coating frying pan, perfect for people interested to cook authentic, fans of no-nonsense cooking

Furthermore, we used a red Kuhn Rikon Hotpan to cook our pene pasta. The Hotpan is a very versatile pan and we’ve already used it for cooking a mushroom Risotto from Sanopilz.
Cheeses were displayed on a beautiful wooden board from Massivholz Design.
